Tonight the wife fried up a big ole bear sausage burger for supper, man was that some good eating. She fried it in bear fat, I swear a flip flop would taste good fried in that stuff. My buddy who gave me the bear sausage after I ground it up and packaged it for him, also gave me the fat to render down, ended up with 14 pints and a few half pints! Makes the best biscuit's I have ever eaten.

They must be thriving down that way. I’ve been watching the telecheck harvest results daily. Looks like a total of 9 were taken. 5 of them were in Letcher County, 2 in Wayne County and one each in Leslie and Knox Counties.

Bear is one of my favorite sausage meats. Unfortunately I don't have the time or energy to hunt them myself so I rely on my buddies who do, I'll make sausage and we split it 50/50, jalapeno summer sausage generally doesn't last long in my house.
